Egyptian Celery Soup(Solomon Iv, Solomon In His Royal Cities) - cooking recipe

Ingredients
    1 Tbsp. butter
    1 small onion, chopped
    2 c. chopped celery
    1 Tbsp. flour
    4 c. rich chicken broth
    1 1/2 c. light cream
    salt and white pepper
Preparation
    Melt butter in a heavy skillet.
    Add onion and cook until limp.
    Add celery and toss to cover with butter.
    Sprinkle on flour and cook for 1 to 2 minutes.
    Add stock and mix thoroughly. Transfer to a saucepan and add remaining stock.
    Simmer soup 20 minutes or until celery is tender.
    Add cream and season to taste. Serve hot or cold.
