Oriental Chicken Stir-Fry - cooking recipe

Ingredients
    1/4 c. oil
    3 chicken breasts, boned and cut into bite-size pieces
    3 c. broccoli florets
    1 2/3 c. chopped red pepper
    3 1/4 c. sliced mushrooms
    3 Tbsp. thinly sliced scallions
    1/2 c. chicken stock
    3 Tbsp. dry sherry
    1 Tbsp. cornstarch
    2 Tbsp. soy sauce
    1/2 tsp. hot pepper sauce
    1/3 c. roasted, unsalted cashews
Preparation
    Heat oil in wok or large, heavy skillet.
    Stir-fry chicken over moderate heat for 5 minutes, until opaque.
    Skim chicken from pan.
    Set aside.
    Stir-fry broccoli, red bell pepper, mushrooms and scallions for 3 minutes.
