Squash Casserole - cooking recipe

Ingredients
    2 1/2 lb. yellow squash
    1 large carrot, grated
    2 tsp. pimento
    1 c. cream of chicken soup
    1/2 pt. sour cream
    1/2 c. margarine
    8 oz. crumb type herb stuffing mix
Preparation
    Preheat oven to 375\u00b0.
    Boil, drain and cool squash.
    Mix in carrot, pimento and sour cream.
    Add salt and pepper to taste. Melt margarine and mix with stuffing mix.
    Place 1/2 of mixture on bottom of 2-quart casserole.
    Add squash mixture, top with rest of stuffing.
    Bake 30 minutes.
    Serves 8.
