Oven Fried Chicken For Two - cooking recipe

Ingredients
    1/4 c. shortening or oil
    1/4 c. all-purpose flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1 1/2 to 2 lb. broiler-fryer cut into quarters
    1/8 tsp. paprika
Preparation
    Heat oven to 425\u00b0.
    Use a 9 x 9 x 2-inch or 11 3/4 x 7 1/2 x 1 1/2-inch pan.
    Melt shortening in pan.
    Mix flour, salt, paprika and pepper in bag.
    Shake chicken in bag, 2 to 3 pieces at a time. Place chicken skin down in pan.
    Bake uncovered 30 minutes; turn. Bake until tender, 18 to 20 minutes longer.
    Makes 2 servings.
