Shrimp And Rice Salad - cooking recipe

Ingredients
    1 lb. large, peeled shrimp
    3 Tbsp. red wine vinegar
    1 tsp. minced garlic
    1 tsp. dill weed
    1/2 tsp. salt
    1/2 tsp. ground pepper
    5 Tbsp. olive oil
    1 c. rice, cooked, rinsed and drained
    1 c. green pepper, chopped fine
    1 c. sliced, fresh mushrooms
    1/2 c. chopped scallions
Preparation
    In skillet, bring 1 inch of water to a boil.
    Add shrimp and cook just until pink (2 or 3 minutes).
    Drain.
    Cut shrimp into thirds and set aside.
