Zesty Fiesta Corn - cooking recipe
Ingredients

1/2 envelope (2 Tbsp.)
taco seasoning mix
1/2 c. water
1/2 c. oil
1/4 c. vinegar
1 (16 oz.) can whole kernel corn, drained
1/4 c. green pepper, diced
1/2 c. sliced ripe olives (optional)
1 1/2 c. tomatoes, peeled and chopped (take out excess juice and seeds if they aren't firm and meaty)
Preparation

In large bowl, stir together seasoning mix and water until blended.
Add oil and vinegar.
Add corn and other ingredients. Toss lightly.
Chill several hours; stir and serve.
Makes 6 large servings.
