Sweet Potato Muffins - cooking recipe
Ingredients

1/2 c. softened butter
1 1/4 c. sugar
2 eggs
1 1/4 c. mashed sweet potatoes, canned or cooked
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. milk
1/4 c. chopped pecans or walnuts
1/2 c. raisins
Preparation

In a mixing bowl, cream butter and sugar.
Add eggs and mix well.
Blend
in
sweet
potatoes.
Sift flour with baking powder, salt, cinnamon and nutmeg.
Add alternately with milk. Do not overmix.
Fold in nuts and raisins.
Grease muffin tins and fill 2/3
full.
Bake
25 minutes in preheated 400\u00b0 oven. Yield: 3 dozen muffins.
