Diabetic-Fruit Medley Salad - cooking recipe
Ingredients

1 envelope (1 Tbsp.) unflavored gelatin
1/2 c. unsweetened orange juice
1 1/4 c. boiling water
1/4 tsp. salt
1 1/4 tsp. liquid sweetener
food coloring (if desired)
1 medium pear or apple, diced
1/2 c. Tokay grapes, cut in half and seeded
Preparation

In a medium mixing bowl, soften gelatin in orange juice.
Stir in boiling water, salt and liquid sweetener.
Chill until slightly thickened, but not set.
Carefully stir in fruit.
Pour into 3 or 4-cup mold or 6 individual molds.
Chill until set, about 4 hours. Serves 6.
