Penne Primavera With Smoked Mozzarella - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 large shallot, chopped
    6 cloves garlic, sliced thin
    2 cans whole tomatoes
    1/2 c. fresh basil leaf, sliced
    2 tsp. oregano
    1/4 tsp. salt
    1 bunch broccoli, cleaned and cut bite-size
    1 c. chicken broth
    1 large red sweet pepper, sliced
    1 large yellow sweet pepper, sliced
    1 c. Mozzarella, plain or smoked, cubed and keep chilled
    1 lb. pasta (penne or ziti), cooked
    grated Locatelli cheese
Preparation
    In large saucepan add 2 tablespoons oil and cook shallot and 1/2 garlic one minute.
    Stir in tomatoes, basil, oregano and salt. Break up tomatoes with fork.
    Simmer and cook partially covered 25 minutes.
    Stir occasionally.
