Spanish Rice - cooking recipe

Ingredients
    4 slices fried bacon and bacon drippings
    1 1/2 c. Minute rice
    1/2 c. thinly sliced onion
    1/3 c. diced green pepper
    1 1/2 c. water
    1 can (8 oz.) tomatoes
    1 tsp. salt
    1/2 tsp. prepared mustard (optional)
Preparation
    Crumble bacon and place that and drippings in skillet.
    Add rice, onions and green pepper.
    Cook and stir until lightly browned.
    Add remaining ingredients.
    Quickly bring to boil. Reduce heat and simmer for 5 minutes.
    Yields 4 servings (good with cornbread).
