Brandied Yams - cooking recipe

Ingredients
    5 large sweet potatoes
    1/4 c. sugar
    1/4 c. brandy
    3 Tbsp. butter, melted
    1 tsp. salt
    1/2 tsp. ground nutmeg
    1/2 tsp. ground ginger
    1/8 tsp. pepper
    1 Tbsp. butter, melted
    1 Tbsp. grated orange rind
    orange slices for garnish
Preparation
    Cook sweet potatoes in boiling water to cover 45 minutes or until tender; cool to touch. Peel and mash potatoes.
    Stir in next 7 ingredients; spoon into an 11 x 7 x 1 1/2-inch baking dish. Brush top with butter; sprinkle with orange rind. Bake at 350\u00b0 for 30 minutes; add garnish.
    Serves 8.
