Mali Veggie Rice - cooking recipe

Ingredients
    1 c. long grain rice
    1 tomato
    1 c. mushrooms
    1 green pepper
    1 small onion
    3 Tbsp. butter
    1 Tbsp. tomato paste
    1/8 tsp. salt
    dash of cayenne
    1/4 tsp. curry powder
Preparation
    Cook the rice.
    Wash the tomato, mushrooms and green pepper. Cut the mushrooms in half and mince the green pepper. Peel and slice the onion.
    Melt the butter in the skillet and saute the onion until soft.
    Add the other vegetables, tomato paste, salt, cayenne and curry powder.
    Cook for 15 minutes, stirring.
    Stir in the cooked rice and serve.
