Eggplant Dressing - cooking recipe

Ingredients
    1 lb. ground meat
    1 large bell pepper
    1 c. celery
    1 large onion
    1 c. cooked rice
    salt and pepper
    1 large eggplant (I use purple)
Preparation
    Brown meat; set aside.
    Peel and cut up eggplant.
    Cover with water.
    Cook until tender.
    Saute bell pepper, celery and onion. Drain eggplant.
    Mix all with ground meat and rice.
    Put in casserole.
    Bake 20 minutes at 300\u00b0.
