Chicken Neptune - cooking recipe

Ingredients
    4 (8 oz.) chicken breasts
    4 oz. crabmeat
    4 oz. small shrimp
    1 beaten egg (for egg wash)
    2 c. milk (for egg wash)
    2 c. breading mix
Preparation
    Pound chicken breast until thin on one half.
    Put 1 ounce shrimp and 1 ounce crabmeat on pounded half of breast.
    Fold over and pin together with toothpicks.
    Dip in egg wash and then in breading mix.
    Bake in 375\u00b0 oven for 20 minutes.
    Serve on bed of rice and top with Hollandaise sauce.
    Serves 4.
