Simmons Baked Catfish - cooking recipe
Ingredients

1/4 c. chopped bell pepper
2 Tbsp. butter
1 c. soft bread crumbs
1/2 c. shredded Cheddar cheese
1/4 c. mayonnaise
2 Tbsp. prepared mustard
1 1/2 to 2 lb. catfish fillets
salt and pepper
Preparation

In a skillet, saute bell pepper in butter for 5 minutes. Lightly stir in bread crumbs, mayonnaise and mustard until blended. Arrange fillets in buttered 3-quart shallow baking dish.
Season with salt and pepper.
Spoon crumb mixture on top of fish.
Bake in preheated 350\u00b0 oven for 20 to 30 minutes or until fish flakes easily when tested with a fork.
Do not overbake.
Serves 6.
