Ingredients

6 Tbsp. olive oil
2 Tbsp. fresh lemon juice
1 tsp. dried basil
1 tsp. dried oregano
1 lb. boned and skinned chicken breasts
3/4 lb. uncooked medium pasta
salt and freshly ground black pepper
2 medium cloves garlic, finely chopped
3 c. packed shredded spinach leaves
1 c. packed, drained sun-dried tomatoes, cut into 1/4-inch strips
1/2 lb. fresh goat cheese, cut into medium sized chunks
2 Tbsp. finely chopped fresh Italian parsley
Preparation

In a mixing bowl, stir together 2 tablespoons olive oil with lemon juice, basil and oregano.
Add chicken breasts.
Turn to coat evenly and marinate about 30 minutes.
Preheat the grill or broiler.
Cook pasta until al dente.
