Zucchini Brownies - cooking recipe
Ingredients

2 c. shredded zucchini
2 c. flour
1 1/4 c. sugar (diabetic, use 3/4 c. sugar and Sweet One to equal 1/2 c.)
1 tsp. salt
1 1/2 tsp. baking powder
1/2 c. cocoa
1/2 c. salad oil
2 tsp. vanilla
1/2 c. chopped nuts
2 eggs or 1/2 c. Second Nature
Preparation

Sift together dry ingredients.
Combine zucchini and oil. Blend eggs.
Blend in dry ingredients.
Add vanilla and nuts. Blend well.
Spread in greased and floured 9 x 13-inch pan or 11 x 15-inch pan.
Bake at 375\u00b0 for 18 to 20 minutes.
Ice after cool.
