Raisin Bran Muffins Ala Cooper - cooking recipe

Ingredients
    1 (15 oz.) box Raisin Bran cereal
    5 c. all-purpose flour
    3 c. sugar
    1 Tbsp. plus 2 tsp. baking soda
    2 tsp. salt
    4 well beaten eggs
    1 c. vegetable oil
    1 qt. buttermilk
    1 c. raisins
Preparation
    Combine the first 5 ingredients in a very large bowl.
    Add raisins (optional).
    Make well in center and pour in eggs, buttermilk and oil.
    Stir until mixed.
    Cover; store up to 6 weeks in refrigerator.
    Bake at 400\u00b0 for 12 to 15 minutes in muffin pan.
