Spanish Rice - cooking recipe

Ingredients
    3 slices bacon, diced
    1 c. rice
    1 qt. tomatoes
    1 c. onion, diced (1 large)
    1 c. green pepper
    1/2 c. water
    1 tsp. salt
    1 tsp. chili powder
    1/2 c. melted shortening or salad oil
    2 c. sifted flour
    3 tsp. baking powder
    1 c. brown sugar, firmly packed
    1/4 tsp. salt
    2 eggs
    1 c. milk
    1 c. chopped nuts
Preparation
    Sift flour again with baking powder, cinnamon and salt into mixing bowl.
    Beat eggs slightly.
    Stir in milk, shortening and brown sugar.
    Add to dry ingredients all at once and mix quickly. Stir in nuts.
    Spoon into muffin cups and bake in moderately hot oven at 375\u00b0 for 12 to 15 minutes.
    Makes 12 large muffins.
