Lemon Asparagus Pilaf - cooking recipe

Ingredients
    1 onion (chopped)
    1 lb. asparagus, trimmed and chopped
    1 Tbsp. butter
    1 Tbsp. olive oil
    1 c. chicken broth
    3/4 tsp. thyme
    3/4 tsp. salt
    1/4 tsp. pepper
    1 c. uncooked rice
    1 1/3 c. water
    zest of 1 lemon
    1 Tbsp. lemon juice
Preparation
    Melt butter and oil in large skillet over medium heat.
    Add onion, cook, stirring 5 minutes.
    Stir in asparagus, thyme, salt and pepper and cook for 1 minute.
    Add rice, stir for 1 minute. Add broth and water; cover and bring to a simmer.
    Reduce heat and cook until rice is done and asparagus is tender, about 25-30 minutes.
    Stir in zest and lemon juice just before serving.
