Carrot-Pineapple Bread - cooking recipe

Ingredients
    1 c. oil
    2 c. sugar
    3 eggs, beaten
    2 1/2 c. flour
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    2 tsp. vanilla
    2 c. grated carrots
    1 c. chopped pecans
    1 c. crushed pineapple, drained
Preparation
    Combine oil and sugar, mixing well.
    Add eggs.
    Sift dry ingredients together and add, mixing well.
    Add remaining ingredients and pour into 2 greased and floured loaf pans.
    Bake at 350\u00b0 for 1 hour.
    I use four 7 x 3 1/2-inch pans and bake 40 to 45 minutes, or until a toothpick comes out clean.
