Boxty(Bacstai) - cooking recipe

Ingredients
    1 lb. raw potatoes
    6 oz. plain flour
    1 tsp. salt
    1 tsp. baking powder
    1/2 pt. milk (approximately)
Preparation
    Liquidise or grate potatoes.
    Add flour, salt and baking powder. Add milk to a dropping pancake consistency. Drop spoonfuls onto a hot, greased frying pan. Fry both sides.
    Serve with hot butter. To prevent the batter from turning brown, do not leave the mixture stand but lightly fry and then re-fry before serving. Delicious with bacon rasher and fried egg.
