Pumpkin Kasha(A Russian Dish Pudding) - cooking recipe

Ingredients
    2 c. rice
    4 c. pumpkin, cooked and mashed
    5 eggs, beaten
    3 c. milk, heat to warm with butter
    1 tsp. salt
    1 1/2 c. sugar or to taste
    1 stick butter or margarine
    1 tsp. nutmeg
    1/2 tsp. cinnamon
    2 tsp. vanilla
Preparation
    Parboil rice, rinse in cold water and drain.
    In a large bowl, mix all ingredients well.
    Pour mixture into two bowls about two quart size, which have been buttered.
    Sprinkle with a little nutmeg.
    Bake in a hot oven at 400\u00b0 for about 1 hour or until a knife inserted comes out clean.
