Banana Nut Bread - cooking recipe

Ingredients
    1 3/4 c. all-purpose flour
    1 1/2 c. sugar
    1 tsp. baking soda
    1/2 tsp. salt (optional)
    2 eggs
    3 ripe medium sized bananas
    1/2 c. vegetable oil
    1/4 c. plus 1 Tbsp. buttermilk
    1 tsp. vanilla
    1 c. chopped walnuts or pecans
Preparation
    In a large bowl, stir together flour, sugar, baking soda and salt.
    In another mixing bowl, combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined.
    Fold in nuts.
    Pour into a greased 9 x 5 x 5-inch baking pan (large loaf pan).
    Bake at 325\u00b0 for 1 hour and 20 minutes or until bread tests done.
    Cool on wire rack.
    Yield:
    1 loaf.
    Recipe does not double very well.
