Golden Sweet Potato Boats - cooking recipe
Ingredients

4 sweet potatoes or yams
1/2 c. light evaporated skim milk
1/4 c. margarine
1 tsp. vanilla
salt to taste
2 bananas, cut into 1/4-inch slices
1/4 pecan pieces
Preparation

Preheat oven to 375\u00b0.
Wash sweet potatoes.
Bake one hour until done.
Cut in half lengthwise.
Carefully scoop out pulp, leaving shells intact.
In bowl, beat pulp, evaporated milk, margarine, vanilla and salt until fluffy.
Fold in bananas and pecan pieces.
Stuff shells with mixture.
Bake 20 minutes at 350\u00b0 until heated through.
Makes 8 servings.
