Chinese Scallops And Veggie Stir-Fry - cooking recipe
Ingredients

1 c. scallops, washed
1 large leek, washed and chopped or sliced
1 c. sliced fresh mushrooms
3/4 c. each: chopped broccoli, sliced carrots and sliced zucchini
2 Tbsp. peanut oil
1 Tbsp. sesame oil
1 tsp. chili oil or hot pepper flakes to taste
1 tsp. hoisin sauce
3/4 tsp. grated fresh ginger
Preparation

Heat oils in wok or frying pan.
Add scallops; saute for about 2 minutes.
Remove.
Add vegetables; stir-fry until tender-crisp. Add hoisin sauce and ginger; return scallops to pan.
Heat through.
Serves 2.
