Carrot Casserole - cooking recipe

Ingredients
    1 lb. carrots, sliced
    2 eggs
    1/2 c. chopped onion
    1 c. chopped celery
    1 Tbsp. chopped fresh parsley
    3/4 c. butter or oleo, melted
    1 tsp. salt
    8 c. cubed day old bread
Preparation
    In a saucepan cover carrots with water and cook until very tender.
    Drain and mash.
    In a large bowl beat eggs; add onion, celery, parsley, butter and salt.
    Stir in carrots, add bread cubes and mix well.
    Pour into
    greased 2-quart baking dish.
    Bake uncovered at 350\u00b0 for 30 to 40 minutes or until set.
    Makes 8 to 10 servings.
