Spinach Salad - cooking recipe

Ingredients
    2 qt. washed and well drained spinach leaves
    1/2 lb. fresh mushrooms
    1/2 lb. lean bacon, fried crisp and crumbled
    2 hard-cooked eggs, roughly chopped
    5 scallions, chopped
    3/4 c. homemade or store bought garlic croutons
    2 tsp. German or hot mustard
    1/2 c. mayonnaise
    1/4 c. lemon juice
    1/2 c. Italian olive oil
    1 Tbsp. tarragon vinegar
    1/8 tsp. sugar
    salt and pepper
Preparation
    Tear spinach into bite size bits; place in salad bowl. Arrange crumbled bacon, eggs, scallions and croutons over the spinach and mushrooms.
    Combine all remaining ingredients; mix well.
    Just before serving, or at table, pour dressing over salad and toss lightly.
    Serves 4.
