Sweet And Sour Chicken - cooking recipe

Ingredients
    1 chicken breast
    2 c. water
    1 c. carrots, cut in 2-inch strips
    1/2 c. onions, chopped
    1 can pineapple chunks
    1/2 c. green pepper, cut in strips
    1/4 c. catsup
    1 Tbsp. cornstarch
    1/4 c. brown sugar
    2 Tbsp. vinegar
    1 Tbsp. soy sauce
    3/4 tsp. salt
Preparation
    Simmer chicken breast in water until tender.
    Remove and cut into 1-inch chunks.
    Simmer carrot strips separately in a little water for about 5 minutes.
    Combine brown sugar, catsup, cornstarch, vinegar, salt and soy sauce into a smooth paste.
    Stir into chicken broth, cooking until thickened.
    Add drained pineapple chunks, onions, carrots, chicken and green pepper.
    Heat together 5 or 10 minutes on very low heat.
    Serve over rice.
