Mandarin Orange And Cashew Chicken - cooking recipe

Ingredients
    1 (11 oz.) can mandarin orange segments
    1/4 c. stir-fry sauce
    3 Tbsp. vegetable oil, divided
    2 boneless, skinless chicken breasts, cut into strips
    1/3 c. roasted cashews
    1 clove garlic, minced
    1 medium onion, sliced
    1/2 lb. fresh snow peas
Preparation
    Drain mandarin oranges; reserve 2 tablespoons syrup.
    Blend reserved syrup and stir-fry sauce.
    Heat 2 tablespoons oil in a wok or large skillet over high heat.
    Add chicken, cashews and garlic.
    Stir-fry 3 minutes; remove.
    Heat remaining oil in same pan.
    Add onion and snow peas; stir-fry 3 minutes.
    Add chicken mixture and stir-fry sauce mixture to onion-snow peas mixture; cook and stir to coat all ingredients with sauce.
    Remove from heat; stir in oranges.
