Ingredients
    fresh green beans
    water
    1 small onion
    1/2 tsp. salt
    dash of Tabasco
    cider vinegar
Preparation
Trim just the stems and tips from fresh green beans.
Use a jar that the beans will stand up in.
Put beans in saucepan with just enough water to half cover beans.
(Don't use aluminum, it will darken beans.)
Bring to a boil and simmer partly covered for 5 to 7 minutes.
Beans should be hot through, but crunchy.
    Put beans in jar.
Use cooking liquid to half fill jar.
Add onion, sliced and separated into rings, 1/2 teaspoon salt and Tabasco.
Fill jar to top with cider vinegar.
Let stand overnight in refrigerator, then enjoy.
    Will keep 2 weeks.
