Lillie'S Crispy Bread And Butter Pickles - cooking recipe

Ingredients
    1 gal. medium-sized cucumbers
    11 gal. water
    1/2 c. pickling lime
    1 qt. small onions, peeled and sliced 1/4 inch thick
    1/2 c. pickling salt
    7 c. sugar
    6 c. vinegar
    1 cinnamon stick
    1 tsp. whole cloves
    1 tsp. whole allspice
    1 Tbsp. mixed pickling spices
    1 Tbsp. mustard seed
    1 Tbsp. celery
Preparation
    Soak whole cucumbers in mixture of lime and water overnight. Mix until lime dissolves, rinse cucumbers and drain.
    Slice cucumbers into 1/4 inch slices and return to large container.
    Add onions.
    Pour salt over all and mix well.
    Cover with cubed or chipped ice and let stand for 3 hours.
    Drain container.
    In a large kettle, mix vinegar, sugar and spices, tied in a cheese cloth bag.
    Bring mixture to a rolling boil.
    Add onions and cucumbers and simmer for 3 to 4 minutes.
    Pack into jars, remove spices and pour hot syrup into jars to within 1/2 inch of the top and seal.
