Zucchini Relish - cooking recipe

Ingredients
    10 c. chopped unpeeled zucchini
    4 c. chopped onion
    5 Tbsp. salt
    1 green pepper, chopped fine
    2 1/4 c. white vinegar
    3 c. sugar
    1 tsp. dry mustard
    1 tsp. turmeric
    1 tsp. cornstarch
    2 tsp. celery seed
    2 tsp. mustard seed
    1/2 tsp. pepper
Preparation
    Grind squash and onion together.
    In a bowl mix with salt and let stand overnight.
    Drain and rinse well.
    Chop pepper.
    Add to vegetables.
    In pan, combine all ingredients except vegetables. Bring to a boil, then reduce to a simmer for 10 minutes.
    Add vegetables.
    Heat to a full boil.
    Pour in jars and process for 10 minutes.
