Hush Puppies - cooking recipe

Ingredients
    1 c. white corn meal
    1 c. all-purpose flour
    1 Tbsp. baking powder
    1 tsp. salt
    1/2 tsp. baking soda
    2 Tbsp. sugar
    1/3 c. vegetable oil
    2 eggs, well beaten
    1/2 c. buttermilk
    1/2 c. evaporated milk (unsweetened)
    1 c. chopped onion
Preparation
    Mix all dry ingredients in a large bowl. Add milk, buttermilk, eggs and oil. Stir until well blended. Add onion and mix well. Batter should be stiff. Drop rounded tablespoons into hot deep-fat fryer. Turn when hush puppy floats and brown both sides to golden brown. Drain on paper towels. Makes about 24.
