Rice And Chicken Jambalaya - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 c. diced celery
    4 c. chicken broth
    1 c. uncooked rice
    1 1/2 tsp. salt
    1/8 tsp. pepper
    chicken, cooked and cut
    1 1/2 c. diced carrots
    1 c. chopped parsley
Preparation
    Cook onion, celery, carrots, rice and seasonings in chicken broth for 20 to 30 minutes.
    Add chicken and parsley; cook 15 minutes more.
    Makes 8 servings.
