Tuna Seafood Patties - cooking recipe

Ingredients
    1 c. (12 1/2 oz.) tuna in water
    1/4 c. Dijon mustard
    1/4 c. finely chopped celery
    1/4 c. finely chopped green pepper
    1/4 c. finely chopped green onions
    1 (2 oz.) jar chopped pimento, drained
    1 1/4 c. dry bread crumbs, divided
    1/2 c. Miracle Whip
    oil
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Mix drained tuna, dressing, mustard, vegetables, pimento, seasonings and 1/2 cup of the bread crumbs.
    Shape mixture into 15 (2-inch) balls.
    Roll in remaining 3/4 cup bread crumbs, coating well.
    Flatten balls into small patties.
    Refrigerate 30 minutes. Heat 1/2 cup oil in large skillet over medium-high heat.
    Add tuna patties.
    Cook 5 minutes on each side or until golden brown, adding additional oil, as needed.
    Remove from skillet; drain on paper towels.
    Makes 8 servings.
