Chocolate Pudding - cooking recipe

Ingredients
    2 (1 oz.) sq. unsweetened chocolate
    3/4 c. sugar
    1/4 tsp. salt
    3 1/2 c. skim milk, divided
    1/4 c. plus 1 Tbsp. cornstarch
    2 tsp. vanilla extract
Preparation
    Melt chocolate in a heavy saucepan over low heat.
    Stir in sugar and salt.
    Gradually add 3 cups milk, stirring constantly with a wire whisk.
    Cook over medium heat 5 minutes.
    Combine remaining milk and cornstarch; stir well.
    Add to saucepan.
    Cook 30 minutes or until mixture comes to a boil, stirring frequently. Cook 1 minute, stirring frequently.
    Remove from heat; stir in vanilla.
    Serve warm or chilled.
    Yield:
    8 servings (about 167 calories per 1/2-cup).
