Waldorf Salad With Chicken - cooking recipe
Ingredients

1/3 c. apricot preserves
1/2 c. mayonnaise
1 Tbsp. fresh chopped chives
2 Tbsp. lemon juice
1/2 tsp. salt
pinch of black pepper
1 lb. cubed cooked chicken
1 red apple, cut into 1/2-inch pieces with skin left on
1 green apple, cut into 1/2-inch pieces with skin left on
2 celery ribs, cut into 1/4-inch pieces
1/4 c. raisins
1/4 c. walnuts
lettuce for garnish
chopped parsley for garnish
1/2 tsp. mustard
Preparation

Combine preserves, mayonnaise, chives, mustard, lemon juice, salt and pepper in large mixing bowl.
Blend well.
Add chicken, apples, celery, raisins and nuts.
Stir to coat.
Add salt and pepper to taste.
Arrange lettuce leaves on plate.
Mound salad on lettuce.
Garnish with parsley.
Makes 6 servings.
