Fried Rice - cooking recipe

Ingredients
    1 c. cold cooked rice
    2 eggs
    1 pkg. frozen peas and carrots
    1 tsp. ginger
    2 stalks chopped green onion
    2 Tbsp. cooking oil
    salt and pepper to taste
    chopped pork or ham or shrimp (optional)
Preparation
    Rinse peas and carrots in cold water.
    Heat 1 tablespoon cooking oil in pan.
    Add peas, carrots and ginger.
    Cook approximately 2 minutes.
    Remove from pan and set aside.
    Heat 1 tablespoon cooking oil in pan.
    Add onions.
    Stir and cook for 1 minute.
    Add beaten eggs and scramble.
    Add rice and stir until hot (about 5 minutes).
    Add peas and carrots and mix well.
    Add chopped pork, ham or shrimp.
    Serve hot.
