Scallops And Rice Au Gratin(Weight Watchers Recipe) - cooking recipe
Ingredients

3/4 lb. scallops, washed and cut up
4 oz. Cheddar cheese, grated
4 oz. onion, chopped
1/4 c. chopped celery
1/2 c. chopped green pepper
4 tsp. margarine, softened
1 tsp. flour, dissolved in 1 1/4 c. skim milk
salt and pepper to taste
2 c. cooked rice
Preparation

Preheat oven to 400\u00b0.
Saute onion, celery and green pepper in small amount of water in saucepan.
Heat until very thick, stirring constantly.
Remove from heat.
Stir in margarine and scallops.
Layer casserole dish with rice, scallop mixture and cheese.
Bake for 15 to 20 minutes.
Serves 4.
