Enchiladas El Paso - cooking recipe

Ingredients
    1 lb. ground beef
    16 oz. can tomatoes
    6 oz. can tomato paste
    1/2 c. water
    1/2 c. chopped onion
    1 Tbsp. chili powder
    1 1/4 tsp. salt
    1/4 tsp. pepper
    9 oz. pkg. tortillas
    oil
    2 c. (8 oz.) Cheddar cheese
Preparation
    Brown meat; drain.
    Add tomatoes, tomato paste, water, onion and seasonings.
    Let simmer.
    Dip each tortilla in hot oil.
    Place tablespoonful of meat sauce and cheese on each tortilla; roll up tightly.
    Place, seam side down in 9 x 13-inch pan.
    Top with remaining meat and cheese.
    Cover with foil.
    Bake at 375\u00b0 for 25 minutes.
    Makes 6 to 8 servings.
