Speckled Butter Bean Chowder - cooking recipe
Ingredients

4 c. speckled butter beans
1 Tbsp. butter
1 small onion, chopped
1 piece celery, sliced
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. sugar
1 c. tomatoes, cut in small pieces
1 c. water
1 beef bouillon cube
1 carrot, chopped
Preparation

Heat butter in large heavy saucepan.
Cook onion, carrots and celery until softened, but not browned, about 5 minutes.
Add butter beans with liquid.
Add all remaining ingredients.
Bring to
a boil.
Simmer on low heat 15 to 20 minutes or longer.
This chowder may be prepared ahead of time and reheated.
