Moo Goo Gai Pan - cooking recipe

Ingredients
    1 (1 oz.) pkg. dried black Chinese mushrooms
    1/4 c. lite soy sauce
    2 Tbsp. rice vinegar
    3 cloves garlic, minced
    1 lb. boneless, skinless chicken breasts
    1 Tbsp. cornstarch
    2 Tbsp. peanut or vegetable oil, divided
    1 (7 oz.) jar straw mushrooms, drained
    3 green onions, cut into 1-inch pieces
    hot cooked white rice or Chinese egg noodles (optional)
Preparation
    Place dried mushrooms in a small bowl.
    Cover with warm water. Soak 20 minutes to soften.
    Drain.
    Squeeze out excess water. Discard stems.
    Slice caps.
