Twin Peak Crab - cooking recipe

Ingredients
    1 medium onion, chopped
    1/2 green pepper, chopped
    2 large stalks celery, chopped
    1 egg
    1 tsp. Grey Poupon mustard
    1 Tbsp. ketchup
    dash of Tabasco sauce
    1 lb. crab meat
    Old Bay seasoned bread crumbs
    salt and pepper
    butter or margarine
    cracker crumbs
    1/4 c. each Mozzarella, Swiss and sharp cheese
    English muffins
Preparation
    Saute onion, pepper and celery in butter.
    Add small amount of water to prevent drying.
    Add crab meat until hot.
    Put into mixing bowl and add egg, mustard, ketchup, Tabasco and seasoning to taste.
    Add Mozzarella and sharp cheese.
    Add cracker crumbs until consistency is right to hold mixture together.
    Toast 1/2 English muffin and put on cookie sheet or pie tin.
    Build crab mixture into mound on top of muffin.
    Top with slice of Swiss cheese.
    Toast under broiler until cheese melts.
