Beef Brasi - Barbecued Meat - cooking recipe

Ingredients
    1 rolled boneless chuck roast
    3/4 c. wine or cider vinegar
    1/2 c. salad oil
    1/2 c. water
    1 clove garlic, crushed
    1 Tbsp. Italian seasoning
    1 tsp. salt
Preparation
    Pierce roast deeply all over with a fork.
    Mix remaining ingredients in a large bowl; place roast in bowl, turning to coat well; cover.
    Chill, turning meat several times, 2 days.
    When ready to cook, remove roast from marinade, saving marinade in a small pan.
    Place roast on spit. Set spit in position over hot coals; start rotisserie.
    Roast and brush several times with marinade.
    For rare meat, cook about 1 1/2 hours.
