Eggplant And Rice Fritters - cooking recipe

Ingredients
    2 c. mashed, cooked eggplant
    1 1/2 c. cooked rice
    2 tsp. grated onion
    2 eggs, beaten slightly
    1 c. grated sharp Cheddar cheese
    1/4 c. flour
    1 1/2 tsp. salt
    1/2 tsp. black pepper
    dash of hot sauce
Preparation
    Combine all ingredients; mix well.
    Drop by spoonfuls into 1/2-inch hot oil in skillet.
    Fry until brown.
    (Fry amount needed to serve and refrigerate the rest.)
    Will keep 3 or 4 days.
