Ginger Beer(Native Drink Of St. Croix, Usvi) - cooking recipe

Ingredients
    1/2 lb. ginger
    4 c. water
    2 c. sugar
    1/4 c. fresh lime juice (2 limes)
Preparation
    Wash and drain ginger.
    Grind ginger in a meat grinder.
    Pour water over ginger.
    Steep overnight.
    Strain through a clean, grease-free cheesecloth.
    Add sugar and lime juice.
    Pour into sterile bottles.
    Serve chilled or pour over ice.
    Makes approximately 2 quarts.
