Lime Cucumber Pickles - cooking recipe
Ingredients

7 lb. cucumbers, washed and cut
2 c. lime
water
2 qt. vinegar
4 1/2 lb. sugar
4 Tbsp. pickling spice, tied in cheesecloth
3 sticks cinnamon
Preparation

Cover cucumbers with lime and 2 gallons water. Soak 24 hours. Rinse; cover with clear water. Soak for 3 hours, changing water each hour. Heat vinegar and dissolve sugar. Add pickling spice and cinnamon. Add cucumbers when cool and let set overnight. Cook for 35 minutes on simmer. Pack in jars and seal.
