French Country-Style Beef Stew - cooking recipe

Ingredients
    1 1/2 lb. beef stew meat, cut in 1-inch cubes
    1/4 c. flour
    2 Tbsp. oil
    2 (14 1/2 oz.) cans Del Monte tomatoes
    1 (13 oz.) can beef broth
    4 to 6 carrots (1-inch chunks)
    2 to 4 potatoes (1-inch chunks)
    3/4 tsp. thyme
    2 Tbsp. Dijon mustard
Preparation
    Combine meat and flour in a plastic bag.
    Toss to coat evenly. In a 6 quart pot, brown meat in oil.
    Add salt and pepper to taste, if desired.
    Add remaining ingredients except mustard. Bring to a boil.
    Reduce heat.
    Cover and simmer about 1 hour or until beef is tender.
    Stir occasionally.
    Blend in mustard.
    If too thin, add a little Wondra flour to thicken.
    Serve over rice.
