Summer Sausage - cooking recipe

Ingredients
    5 lb. ground beef
    5 Tbsp. Tender Quick salt
    1 c. water
    3 tsp. cracked peppercorns
    1 tsp. hickory smoke salt
    2 tsp. crushed red pepper
    3 Tbsp. garlic salt
    1 Tbsp. liquid smoke
    2 1/2 Tbsp. mustard seed
Preparation
    Can use venison or pork instead of ground beef.
    I use less salt.
